K-BBQ Lamb Lollipops

Nothing says Summer has started like K-BBQ lamb lollipops. This recipe is as easy as 1,2,3 - al you will need is a bottle of Korean BBQ sauce, some lamb and a couple friends to share with.

K-BBQ Lamb Lollipops

Ingredients

A full rack of lamb ribs or cutlets, as many as you like - just ask the butcher to cut them individually to make life easy

Chimac K-BBQ sauce

1 tablespoon of cumin

1 tablespoon of Gochugaru (ground Korean red pepper)

Salt & pepper

Recipe

Marinade the lamb in K-BBQ sauce for at least 4 hours, or up to overnight in the fridge


Mix the cumin, gochugaru and salt and pepper in a bowl


 Remove the lamb from the fridge so it comes to room temperature, get the BBQ nice and hot - when the coals turn white you’re good to go


Remove lamb from marinade and sprinkle on spice mix generously


 Put it on the BBQ, turn regularly so as to avoid over-charring. A little char is tasty, too much is simply much too!


Cook it 3 - 4 minutes for medium rare, 4 - 5 for medium, a little more if you like it well done
