Smash-style beef patties are chopped up on the grill, blended with sweet caramelized leeks and onions, smothered in melted cheese, and packed into toasted ciabatta with spicy kimchi ketchup and sriracha caramel mustard.

2 good-quality, fatty beef burgers from your butcher
Cook the onions and leeks in a frying pan over medium heat until they are cooked nicely and starting to caramelize.
Take them off the heat.
Turn up the heat of the frying pan to very hot.
Put your beef burgers in. Smash a lot of salt on the outside, then smash them into the pan, looking to get a high Maillard reaction here.
Once it's cooked about 80% of the way, flip them over.
Start to break up your meat.
Once the meat is breaking up, throw the onions in. These guys will soak up all of the delicious meat juices into the onions.
Once everything is cooked through and looks nice and browned, put on 4 slices of cheese, let it steam, and then simply toast your bun if you like it toasted.
Put kimchi ketchup on one side of the bread and sriracha mustard on the other side of the bread.
Spoon over your chopped cheese mixture, put a lot of lettuce on top and some pickles, and there you go. You've got a delicious chopped cheese for you and Hillary.
Tip: use a well-seasoned or heavy cast iron pan to get a proper smash and crust on the beef.
